Easy Whipped Feta with Pomegranate & Honey

A creamy whipped feta dip blended with olive oil and garlic.

Ingredients
  

  • 6 oz feta cheese in brine drained and crumbled
  • 1/4 cup reduced-fat cream cheese softened
  • 1 large garlic clove
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 tablespoons cold water
  • 1/3 cup pomegranate seeds
  • 1/4 cup lightly salted pistachios chopped
  • 1 tablespoon hot honey
  • 1 teaspoon fresh thyme leaves
  • 2 whole-wheat pita rounds warmed and cut into wedges

Instructions
 

  • Add feta cheese, cream cheese, garlic, and olive oil to a food processor.
  • Blend until mostly smooth, about 2 minutes, scraping down the sides as needed.
  • With the processor running, slowly drizzle in cold water until the mixture becomes light and creamy.
  • Transfer the whipped feta to a serving plate and spread it evenly.
  • Top with pomegranate seeds, chopped pistachios, and fresh thyme.
  • Drizzle hot honey over the top.
  • Serve immediately with warm pita wedges.

Notes

  • Serve with crackers, bread, or fresh vegetables
  • Add chili flakes for extra heat
  • A squeeze of lemon juice can brighten the flavor
