Cube the watermelon and remove any remaining seeds.
Place the watermelon cubes into a blender.
Add the fresh lime juice, honey or agave syrup, water, and a pinch of salt.
Blend until completely smooth, about 1–2 minutes.
Taste the mixture and adjust the sweetness or tartness if desired.
Pour the mixture into a shallow dish or freezer-safe container.
Cover and freeze for approximately 4 hours, or until fully solid.
Remove from the freezer and let sit at room temperature for 10–15 minutes.
