easy Watermelon Feta Cucumber Salad Recipe

Ingredients
  

  • 4 cups seedless watermelon cubed
  • 1 large English cucumber diced
  • 1/4 cup fresh mint leaves chopped
  • 3/4 cup feta cheese crumbled
  • 3 tablespoons balsamic glaze
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Instructions
 

  • In a large mixing bowl, combine the watermelon cubes, diced cucumber, and chopped mint leaves.
  • Drizzle the olive oil over the mixture.
  • Sprinkle with kosher salt and black pepper.
  • Gently toss until everything is evenly coated.
  • Add the crumbled feta cheese and toss lightly to distribute without breaking it apart too much.
