18-ounce can pineapple chunks, drained, juice reserved
1/2cuppineapple juice
3tablespoonssoy sauce
2tablespoonshoney
Zest of 1 lime
Juice of 1 lime
1/2teaspoonchili powder
1tablespoonfresh cilantrominced
Instructions
Cook the jasmine rice in lightly salted water according to the package directions. Once tender, fluff the rice with a fork and gently fold in the minced cilantro. Divide between two serving bowls when ready to serve.
Make the sauce by combining the pineapple juice, soy sauce, honey, lime zest, lime juice, chili powder, and cilantro in a small bowl. Stir until well combined and set aside.
Place the peeled and deveined shrimp in a bowl. Add the lime juice, pineapple juice, chili powder, and a pinch of salt. Toss gently and allow the shrimp to sit while the pan heats.
Heat a large cooking pan over medium to medium-high heat for a few minutes. Add the cooking oil.
Remove the shrimp from the marinade, allowing the excess liquid to drip off. Place the shrimp in the hot pan in a single layer. Leave them undisturbed until the bottoms turn pink and opaque.
Flip the shrimp and cook the other side just until opaque and fully cooked. Remove them from the pan and set aside.
Add the pineapple chunks to the pan and cook briefly until warmed and lightly caramelized.
Pour in the prepared sauce and let it gently simmer for 1–2 minutes, stirring occasionally, until slightly reduced.
Return the shrimp to the pan and toss briefly in the sauce to coat.
Spoon the pineapple shrimp mixture over the cilantro rice. Drizzle with extra sauce from the pan and serve the Tropical Shrimp Rice Bowl warm.
Notes
For extra color and texture, serve this bowl with sliced avocado, cucumber, shredded carrots, green onions, or additional fresh cilantro.
