Ingredients

  • - 4 tablespoons unsalted butter
  • - 2 yellow onions finely chopped, about 3 cups
  • - 3 garlic cloves minced, about 1 tablespoon
  • - 2 cans 28 ounces each crushed tomatoes with their juice
  • - 2 cups halal chicken stock or vegetable stock
  • - 1/4 cup chopped fresh basil plus more for serving
  • - 1 tablespoon sugar or to taste
  • - 1/2 teaspoon freshly ground black pepper or to taste
  • - 1/2 cup heavy whipping cream or to taste
  • - 1/3 cup freshly grated Parmesan cheese plus more for serving
  • - Salt as needed

Instructions

  • Place a nonreactive heavy-bottomed pot or enameled Dutch oven over medium heat. Melt the butter, then add the finely chopped onions.
  • Cook the onions for 10–12 minutes, stirring occasionally, until they're very soft and lightly golden.
  • Add the minced garlic and cook for about 1 minute, stirring frequently, until fragrant.
  • Pour in the crushed tomatoes and their juices, followed by the halal chicken stock, chopped basil, sugar, and black pepper. Stir until everything is well combined.
  • Bring the soup to a gentle boil. Reduce the heat, partially cover the pot, and simmer for approximately 10 minutes so the flavors can develop.
  • For a rustic soup, leave the tomato mixture as it is. For a creamy texture, carefully blend it directly in the pot using an immersion blender until it reaches your preferred consistency.
  • If using a countertop blender, allow the mixture to cool slightly and blend it carefully in small batches according to the manufacturer's hot-liquid instructions. Return the blended soup to the pot.
  • Stir the heavy cream and freshly grated Parmesan into the Easy Tomato Soup Recipe over medium-low heat.
  • Bring the soup back to a gentle simmer without aggressively boiling it. Taste and adjust the salt, pepper, or sugar as necessary.
  • Ladle into warm bowls and garnish with additional Parmesan and fresh basil before serving.

Notes

Vegetable stock can easily replace chicken stock for a vegetarian version. If using chicken stock, choose a halal-certified product.
For the Parmesan, check the label if dietary requirements are important, as traditional Parmesan may use animal-derived rennet. A vegetarian or halal-certified hard cheese is a suitable alternative.
