Easy Spinach Zucchini Chickpea Bake
Spinach zucchini chickpea bake is a healthy vegetarian casserole made with chickpeas, marinara sauce, and melted cheese.

For the Bake
- 2 medium zucchinis sliced
- 2 cups fresh spinach
- 1 can 15 oz chickpeas, drained and rinsed
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil
Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
In a large bowl, combine zucchini slices, spinach, chickpeas, marinara sauce, oregano, garlic powder, salt, and pepper. Mix well.
Transfer the mixture to the prepared baking dish and spread evenly.
Sprinkle mozzarella and Parmesan cheese evenly over the top.
Bake the Easy Spinach Zucchini Chickpea Bake for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden.
Remove from the oven and let rest for 5 minutes before serving.
