Easy Spinach Zucchini Chickpea Bake

Spinach zucchini chickpea bake is a healthy vegetarian casserole made with chickpeas, marinara sauce, and melted cheese.

Ingredients
  

For the Bake

  • 2 medium zucchinis sliced
  • 2 cups fresh spinach
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  • In a large bowl, combine zucchini slices, spinach, chickpeas, marinara sauce, oregano, garlic powder, salt, and pepper. Mix well.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Sprinkle mozzarella and Parmesan cheese evenly over the top.
  • Bake the Easy Spinach Zucchini Chickpea Bake for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden.
  • Remove from the oven and let rest for 5 minutes before serving.

Notes

  • Use dairy-free cheese for a vegan version
