Ingredients

  • 1 poblano pepper
  • 1 –3 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 2 –3 garlic cloves
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder or smoked paprika
  • ½ cup salsa
  • 2 tablespoons canola oil
  • ½ teaspoon salt
  • 14- ounce package extra-firm tofu
  • ½ cup water
  • Lime juice to taste

Instructions

  • Roast the poblano pepper over a gas flame until blistered on all sides. Alternatively, broil it in the oven, turning occasionally until softened and charred.
  • Add the roasted poblano, chipotle peppers, adobo sauce, garlic, cumin, chili powder, and salsa to a blender or food processor. Blend into a mostly smooth paste.
  • Drain and press the tofu with a clean towel to remove excess moisture.
  • Heat canola oil in a large skillet over medium-high heat.
  • Crumble the tofu into small pieces and cook for 5–7 minutes until lightly browned.
  • Pour the prepared sauce over the tofu along with ½ cup water. Stir well to coat evenly.
  • Simmer the Spicy Sofritas Tofu Recipe for 15–20 minutes until the sauce thickens. Add more water if needed.
  • Season with salt and fresh lime juice.
  • Serve warm in tacos, burritos, rice bowls, salads, or wraps.

Notes

  • Serve over cilantro lime rice.
  • Add roasted vegetables for a complete bowl.
  • Great inside quesadillas or stuffed peppers.
  • Garnish with avocado, cilantro, lime wedges, and pickled onions.
