Ingredients

For the Main Mix

  • 1 lb baby potatoes cut into 1-inch chunks
  • 2 ears corn on the cob sliced into 2-inch rounds
  • 1 lb large shrimp peeled and deveined
  • 12 oz beef sausage sliced into rounds
  • 1 large yellow onion cut into 1/2-inch thick wedges
  • 5 cloves garlic minced
  • 5 tbsp salted butter melted
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 1/2 tbsp Old Bay seasoning
  • 1/2 tsp smoked paprika
  • 1 tsp Worcestershire sauce

For Garnish

  • 2 lemons cut into wedges
  • 1/4 cup fresh parsley finely chopped

Instructions

  • Cut the potatoes into 1-inch chunks and slice the corn into 2-inch rounds. Slice the beef sausage, cut the onion into wedges, mince the garlic, and prepare the lemon wedges and parsley.
  • Bring a large pot of salted water to a boil. Add the potatoes and corn and cook for 10 minutes until slightly tender. Drain thoroughly and set aside.
  • Preheat your grill or oven to 400°F (200°C).
  • Cut four sheets of heavy-duty aluminum foil, approximately 18 inches long each.
  • In a large mixing bowl, combine the shrimp, beef sausage, onion wedges, garlic, potatoes, and corn.
  • In a separate bowl, whisk together the melted butter, salt, black pepper, Old Bay seasoning, smoked paprika, and Worcestershire sauce.
  • Pour the seasoned butter mixture over the shrimp mixture and toss until evenly coated. This helps create the signature flavor of these Spicy Grilled Shrimp in Foil Packets.
  • Divide the mixture evenly among the four foil sheets, placing everything in the center.
  • Fold and seal each packet tightly, leaving a little room for steam circulation.
  • Place the packets on the grill or on a baking sheet in the oven.
  • Cook for 15 minutes, flipping the packets halfway through cooking.
  • Carefully open the packets and check that the shrimp are opaque and the potatoes are tender.
  • Squeeze fresh lemon juice over each packet and sprinkle with chopped parsley.
  • Serve immediately.

Notes

  • Substitute beef sausage with turkey sausage if preferred.
  • Add mushrooms or zucchini for extra vegetables.
  • Serve with crusty bread, rice, or a fresh green salad.
  • Adjust Old Bay seasoning according to taste preferences.
