Ingredients
  

For the Smash Burger Tacos

  • 1 pound ground beef 80/20 fat ratio
  • 1 teaspoon kosher salt
  • 10 cracks fresh black pepper
  • 6 six-inch flour tortillas
  • 6 slices muenster or provolone cheese
  • Shredded lettuce
  • Chopped white onion
  • Dill pickle chips

For the Burger Sauce

  • 1/2 cup mayonnaise
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mustard
  • 2 tablespoons minced bread and butter pickles
  • 1 tablespoon pickle brine
  • 10 cracks fresh black pepper
  • 1/4 teaspoon halal-friendly Worcestershire sauce

Instructions
 

  • In a bowl, whisk together all burger sauce ingredients until smooth. Refrigerate until ready to use (can be made up to 3 days ahead).
  • In a small bowl, mix kosher salt and black pepper. Sprinkle evenly over the ground beef.
  • Divide the beef into 2½-ounce balls. Handle gently to keep the meat tender. Place in the refrigerator while preheating your flat top or skillet.
  • Heat a flat top or large cast-iron skillet over high heat until very hot. Do not grease.
  • Place a beef ball onto the hot surface. Immediately top with a flour tortilla.
  • Using a sturdy spatula or burger press, firmly smash the tortilla down so the beef spreads thinly underneath. Cook for 1 minute, then press again lightly. Let cook undisturbed for 2–3 minutes until browned and crispy.
  • Carefully flip so the tortilla side is down. Cook for another 2 minutes until the tortilla crisps. Top with a slice of cheese and allow it to melt.
  • Remove from heat and top your Easy Smash Burger Tacos with burger sauce, shredded lettuce, onion, and pickle chips. Serve immediately.

Notes

  • Swap muenster for cheddar or provolone if preferred.
