In a bowl, whisk together all burger sauce ingredients until smooth. Refrigerate until ready to use (can be made up to 3 days ahead).
In a small bowl, mix kosher salt and black pepper. Sprinkle evenly over the ground beef.
Divide the beef into 2½-ounce balls. Handle gently to keep the meat tender. Place in the refrigerator while preheating your flat top or skillet.
Heat a flat top or large cast-iron skillet over high heat until very hot. Do not grease.
Place a beef ball onto the hot surface. Immediately top with a flour tortilla.
Using a sturdy spatula or burger press, firmly smash the tortilla down so the beef spreads thinly underneath. Cook for 1 minute, then press again lightly. Let cook undisturbed for 2–3 minutes until browned and crispy.
Carefully flip so the tortilla side is down. Cook for another 2 minutes until the tortilla crisps. Top with a slice of cheese and allow it to melt.
Remove from heat and top your Easy Smash Burger Tacos with burger sauce, shredded lettuce, onion, and pickle chips. Serve immediately.
