Easy Skillet Taco Rice Recipe

Easy Skillet Taco Rice made in one pan.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 pound lean ground beef
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup long grain white rice uncooked
  • 2 1/2 cups chicken broth
  • 1 1/4 cups salsa
  • 1 cup grated cheddar cheese
  • 1 cup chopped cilantro

Optional Toppings:

  • Diced tomatoes
  • Avocado
  • Sour cream
  • Green onions
  • Tortilla strips

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and cook until softened.
  • Add ground beef and cook until browned. Stir in garlic and cook for 1 minute.
  • Add taco seasoning, rice, chicken broth, and salsa. Stir well.
  • Bring to a boil, then cover and reduce heat to low.
  • Cook for 15–20 minutes until rice is tender and liquid is absorbed, stirring occasionally.
  • Stir in cheese and cilantro until melted and combined.
  • Remove from heat, cover, and let sit for 2 minutes.
  • Serve your Easy Skillet Taco Rice with desired toppings.

Notes

  • Add black beans or corn for extra texture and flavor.
