Easy shrimp avocado salad

Fresh shrimp, creamy avocado, and juicy tomatoes tossed in a zesty lime dressing.

Ingredients
  

  • 1/4 cup red onion chopped
  • Juice of 2 limes
  • 1 teaspoon olive oil
  • 1/4 teaspoon kosher salt
  • Black pepper to taste
  • 1 pound jumbo cooked shrimp peeled and chopped
  • 1 medium tomato diced
  • 1 medium Hass avocado diced
  • 1 jalapeño seeds removed and finely diced
  • 1 tablespoon fresh cilantro chopped

Instructions
 

  • In a small bowl, combine the chopped red onion, lime juice, olive oil, kosher salt, and black pepper.
  • Let the mixture sit for at least 5 minutes to soften and mellow the onion flavor.
  • In a large mixing bowl, add the chopped shrimp, diced avocado, diced tomato, and jalapeño.
  • Pour the lime dressing over the shrimp mixture.
  • Add the chopped cilantro.
  • Gently toss everything together until evenly coated.
  • Taste and adjust the seasoning with additional salt and pepper if needed.
  • Serve the Shrimp and Avocado Salad Recipe immediately for the freshest flavor.

Notes

  • Substitute cilantro with parsley if preferred.
  • Cherry tomatoes can replace regular tomatoes.
  • Serve with tortilla chips, lettuce cups, or as a taco filling.
  • Add diced cucumber or bell peppers for additional texture.
