- 1 cup whole pitted dates
- 1 cup quick-cooking rolled oats
- 1/2 cup drained pineapple tidbits
- 1/2 cup unsweetened coconut flakes
- 1/4 cup flaxseed meal or ground flaxseed
Add the dates, rolled oats, pineapple tidbits, coconut flakes, and flaxseed meal to a food processor.
Blend until the mixture becomes thick and sticky. Stop occasionally to scrape down the sides with a spatula if needed.
Scoop about 1 tablespoon of the mixture and roll it into a ball.
Continue until all the mixture has been used.
Refrigerate the Pineapple Coconut Energy Balls for at least 30 minutes before serving for the best texture.
