easy Pineapple Coconut Energy Balls

Pineapple Coconut Energy Balls are a quick no-bake snack made with dates, oats, pineapple, coconut, and flaxseed.

Ingredients
  

  • 1 cup whole pitted dates
  • 1 cup quick-cooking rolled oats
  • 1/2 cup drained pineapple tidbits
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup flaxseed meal or ground flaxseed

Instructions
 

  • Add the dates, rolled oats, pineapple tidbits, coconut flakes, and flaxseed meal to a food processor.
  • Blend until the mixture becomes thick and sticky. Stop occasionally to scrape down the sides with a spatula if needed.
  • Scoop about 1 tablespoon of the mixture and roll it into a ball.
  • Continue until all the mixture has been used.
  • Refrigerate the Pineapple Coconut Energy Balls for at least 30 minutes before serving for the best texture.

Notes

  • Fresh pineapple contains more moisture than canned. Drain well before using.
  • Store chilled for the best consistency.
  • Great before workouts or as an afternoon snack.
  • Delicious served alongside yogurt or fresh fruit.
