Ingredients
  

For the Crust

  • cups graham cracker crumbs
  • 5 tablespoons butter melted

For the Strawberry Swirl

  • 1 cup fresh or frozen strawberries
  • 3 tablespoons sugar

For the Cheesecake Filling

  • 600 grams cream cheese about 21 ounces
  • cups powdered sugar
  • ½ teaspoon vanilla extract
  • 2 cups whipped cream

For Garnish

  • Fresh strawberries
  • Extra whipped cream

Instructions
 

  • Combine the graham cracker crumbs and melted butter in a bowl until evenly mixed.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust. Place in the refrigerator while preparing the filling.
  • Add the strawberries and sugar to a small saucepan over medium heat.
  • Cook until the strawberries soften and begin to break down.
  • Mash the strawberries with a fork or potato masher until mostly smooth, leaving a few small pieces if desired.
  • Remove from heat and allow the mixture to cool completely.
  • In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract on high speed until smooth and creamy.
  • Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until fully combined.
  • Spread a layer of cheesecake filling over the prepared crust.
  • Add spoonfuls of the cooled strawberry mixture over the filling.
  • Continue layering the cheesecake mixture and strawberry sauce until both are used.
  • Use a knife or skewer to gently swirl the strawberry mixture through the cheesecake filling to create a marbled effect.
  • Smooth the top with a spatula.
  • Freeze for 2 to 4 hours or refrigerate overnight until the Easy No Bake Strawberry Swirl Cheesecake is fully set.
  • Garnish with whipped cream and fresh strawberries before serving.
