EASY Marry Me Chicken Recipe

Marry Me Chicken is a creamy chicken dinner made with Parmesan, garlic, and sun-dried tomatoes.

Ingredients
  

  • 3 Tbsp extra-virgin olive oil divided
  • 4 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 2 garlic cloves finely chopped
  • 1 Tbsp fresh thyme leaves
  • 1 tsp crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup finely chopped sun-dried tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup finely grated Parmesan cheese
  • Torn fresh basil for serving

Instructions
 

  • Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  • Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.
  • Season the chicken breasts generously with salt and black pepper.
  • Cook the chicken for about 5 minutes per side, or until golden brown. Transfer to a plate.
  • Reduce heat to medium and add the remaining 2 tablespoons olive oil to the skillet.
  • Stir in garlic, thyme, and red pepper flakes. Cook for about 1 minute until fragrant.
  • Add chicken broth, sun-dried tomatoes, heavy cream, and Parmesan cheese. Stir well and season lightly with salt.
  • Bring the sauce to a gentle simmer.
  • Return the chicken and any accumulated juices to the skillet.
  • Transfer the skillet to the oven and bake for 10–12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and arrange the chicken on a serving platter.
  • Spoon the creamy sauce over the chicken and garnish with fresh basil.
