Ingredients

  • 2 tablespoons chopped fresh parsley and/or basil leaves
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 garlic clove grated
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon sea salt
  • cup extra-virgin olive oil or enough to cover the mozzarella balls
  • 8 ounces ciliegine fresh mozzarella cheese balls drained and patted dry

Instructions

  • In a medium jar or airtight container, combine the parsley, basil, lemon juice, lemon zest, grated garlic, red pepper flakes, sea salt, and ⅓ cup olive oil.
  • Stir well until the ingredients are evenly mixed.
  • Add the mozzarella balls to the jar.
  • Pour the remaining olive oil over the mozzarella, adding a little more if needed so the cheese is fully covered.
  • Seal the container tightly and refrigerate the Marinated Mozzarella Balls for at least 1 hour before serving.
  • Stir gently before serving to redistribute the herbs and seasonings.
  • Serve chilled or let sit at room temperature for 10 minutes before serving for the best flavor.

Notes

  • Fresh mozzarella works best for this recipe because it absorbs flavor beautifully.
  • If using larger mozzarella balls, cut them into bite-sized pieces before marinating.
  • Add olives, roasted peppers, or sun-dried tomatoes for extra Mediterranean flavor.
  • This recipe pairs well with pasta salads, grilled vegetables, and antipasto platters.
