- 2 tablespoons chopped fresh parsley and/or basil leaves
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove grated
- ¼ teaspoon red pepper flakes
- ¼ teaspoon sea salt
- ⅔ cup extra-virgin olive oil or enough to cover the mozzarella balls
- 8 ounces ciliegine fresh mozzarella cheese balls drained and patted dry
In a medium jar or airtight container, combine the parsley, basil, lemon juice, lemon zest, grated garlic, red pepper flakes, sea salt, and ⅓ cup olive oil.
Stir well until the ingredients are evenly mixed.
Add the mozzarella balls to the jar.
Pour the remaining olive oil over the mozzarella, adding a little more if needed so the cheese is fully covered.
Seal the container tightly and refrigerate the Marinated Mozzarella Balls for at least 1 hour before serving.
Stir gently before serving to redistribute the herbs and seasonings.
