easy Italian chopped salad

A fresh Italian Chopped Salad made with lettuce, cucumbers, chickpeas, olives, Parmesan, and turkey salami.

Ingredients
  

For the Dressing

  • cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ¾ teaspoon ground black pepper

For the Salad

  • 4 cups iceberg lettuce finely chopped
  • 3 cups romaine lettuce finely chopped
  • 4 Persian cucumbers chopped
  • ½ cup halal turkey salami finely chopped
  • 1 15-ounce can garbanzo beans, drained and rinsed
  • ½ cup Kalamata olives chopped
  • ¾ cup diced tomatoes
  • ½ cup grated Parmesan cheese
  • Additional Parmesan cheese for serving optional

Instructions
 

  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and black pepper until smooth and well combined.
  • Taste the dressing and adjust seasonings as desired.
  • In a large salad bowl, combine the iceberg lettuce, romaine lettuce, cucumbers, turkey salami, garbanzo beans, olives, tomatoes, and Parmesan cheese.
  • Toss the ingredients until evenly mixed.
  • Pour the dressing over the salad.
  • Toss again until every ingredient is coated. This Italian Chopped Salad should be evenly dressed but still crisp.
  • Taste and add extra Parmesan or seasoning if desired.
  • Serve immediately and enjoy.

Notes

  • Freshly grated Parmesan provides the best flavor.
  • Add avocado for a creamier texture.
  • Serve alongside grilled chicken, seafood, or soup.
  • This salad is best enjoyed fresh after tossing.
