Easy Italian Chicken Pasta Salad

A fresh Italian Chicken Pasta Salad made with pasta, chicken, vegetables, and dressing.

Ingredients
  

  • 16 oz penne pasta
  • 3 cups chopped rotisserie chicken
  • 14 oz can artichoke hearts drained and diced
  • 6 oz sliced black olives drained
  • 8 oz mozzarella pearls drained
  • 1 pint grape tomatoes halved
  • 1 cup fresh basil torn or julienned
  • 1 cup shaved Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 oz Italian salad dressing

Instructions
 

  • Cook the penne pasta according to package instructions until al dente.
  • Rinse the pasta under cold water and drain thoroughly.
  • While the pasta cooks, prepare the remaining ingredients by chopping, draining, and slicing as needed.
  • Transfer the cooled pasta to a large mixing bowl.
  • Add chicken, artichokes, olives, mozzarella, tomatoes, basil, and Parmesan.
  • Pour in the Italian dressing and toss everything together until evenly coated.
  • Season with salt and black pepper to taste.
  • For best flavor, refrigerate the Italian Chicken Pasta Salad for at least 30 minutes before serving.

Notes

  • Swap mozzarella pearls with diced mozzarella if needed.
  • Add grilled vegetables for a smoky flavor.
  • Serve with crusty bread or as a standalone meal.
