Ingredients

  • 1 pound halal beef or turkey kielbasa-style smoked sausage sliced into ½-inch coins
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 2 tablespoons low-sodium soy sauce
  • 1 red bell pepper chopped into bite-sized pieces
  • 1 yellow bell pepper chopped into bite-sized pieces
  • 1 cup baby carrots
  • 1 pound baby potatoes halved or quartered if large
  • 2 cups broccoli florets
  • 2 tablespoons olive oil divided
  • 2 tablespoons chopped fresh parsley or sliced green onions for garnish

Instructions

  • Preheat the oven. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  • Prepare the vegetables and sausage. Slice the kielbasa into ½-inch coins. Mince the garlic, chop the bell peppers, cut larger baby potatoes into smaller pieces, and divide the broccoli into bite-sized florets.
  • Start roasting the potatoes and carrots. Place the potatoes and baby carrots on the prepared baking sheet. Drizzle with 1 tablespoon olive oil and toss until evenly coated. Arrange in a single layer and roast for 10 minutes.
  • Make the honey garlic mixture. While the potatoes and carrots roast, whisk together the honey, garlic, low-sodium soy sauce, and remaining tablespoon of olive oil in a large bowl.
  • Coat the sausage and vegetables. Add the sliced kielbasa, red and yellow bell peppers, and broccoli to the bowl. Toss thoroughly until everything is coated in the honey garlic mixture.
  • Combine everything. Remove the baking sheet from the oven. Add the coated sausage and vegetables to the partially roasted potatoes and carrots. Toss gently and spread everything into an even layer.
  • Finish roasting. Return the Honey Garlic Kielbasa and Veggies to the oven for another 20–25 minutes, stirring halfway through. Cook until the potatoes and carrots are fork-tender, the vegetables are roasted, and the sausage has browned around the edges.
  • Garnish and serve. Let the sheet pan rest for about 2 minutes. Sprinkle with fresh parsley or sliced green onions and serve warm.

Notes

Turkey kielbasa is a lighter option, while beef kielbasa provides a richer, smokier flavor. Both work beautifully with the honey garlic sauce.
