Heat olive oil in a large skillet over medium-high heat.
Season the cubed chicken lightly with salt and black pepper.
Add the chicken to the skillet and cook for 3–4 minutes until browned on one side.
In a small bowl, whisk together honey, soy sauce, minced garlic, and red pepper flakes.
Flip the chicken pieces and pour the sauce into the skillet.
Toss well to coat and cook for another 4–5 minutes until the chicken is fully cooked and the sauce thickens.
Serve the Honey Garlic Chicken over rice and garnish with green onions, sesame seeds, peanuts, and a squeeze of lime if desired.
