Easy Ground Turkey Sweet Potato Skillet

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 pound extra-lean ground turkey
  • 1 teaspoon garlic minced
  • ½ cup onions diced
  • ½ cup yellow pepper diced
  • cups sweet potato diced
  • Salt to taste
  • Black pepper to taste
  • Pinch of red chili flakes optional
  • ½ cup shredded mozzarella cheese
  • Fresh parsley for garnish (optional)

Instructions
 

  • Heat olive oil in a cast iron skillet over medium-high heat.
  • Add ground turkey and minced garlic. Cook for about 5 minutes, breaking the turkey apart as it browns.
  • Stir in diced onions and yellow peppers. Cook until onions become soft and fragrant.
  • Add diced sweet potatoes, salt, pepper, and red chili flakes. Mix well.
  • Cover the skillet and cook until sweet potatoes are tender, stirring occasionally. Add a splash of water if needed to soften faster.
  • Preheat oven to 400°F (200°C).
  • Once the sweet potatoes are cooked, sprinkle mozzarella cheese over the skillet.
  • Transfer the skillet to the oven and bake until the cheese melts.
  • Remove, garnish with parsley, and serve warm.

Notes
