- 1 pound mini peppers
- 8 ounces goat cheese plain or flavored
- 1/4 cup balsamic reduction
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Wash and thoroughly dry the mini peppers.
Slice each pepper in half lengthwise and remove ribs and seeds.
Arrange peppers cut-side up on the prepared baking sheet.
Bake peppers for 5 minutes or until slightly tender.
Remove peppers from oven and allow them to cool slightly.
Spoon goat cheese into each pepper half, being careful not to overfill.
Arrange the Goat Cheese Stuffed Mini Peppers on a serving platter.
Drizzle balsamic reduction over the peppers.
Serve warm or chilled.
