Ingredients

  • 200 g gluten-free self-raising flour
  • 1½ teaspoons gluten-free baking powder
  • 1 tablespoon caster sugar
  • 300 ml full-fat milk
  • 2 large free-range eggs
  • Vegetable oil or butter for frying
  • Maple syrup for serving

Instructions

  • In a large mixing bowl, whisk together the gluten-free self-raising flour, gluten-free baking powder, and caster sugar.
  • In a jug, beat together the eggs and milk until well combined.
  • Make a well in the center of the dry ingredients and gradually pour in most of the wet mixture while whisking until smooth.
  • The batter should be thick yet pourable. If needed, add the remaining milk mixture until you reach the right consistency.
  • Heat a lightly greased frying pan over medium-low heat.
  • Spoon about 2 tablespoons of batter into the pan for each Gluten-Free Fluffy American Pancake.
  • Cook for 1–2 minutes until bubbles appear and the surface begins to set.
  • Flip carefully and cook for another 30–60 seconds until golden.
  • Repeat with the remaining batter, lightly greasing the pan between batches.
  • Serve warm with maple syrup and your favorite toppings.

Notes

  • Full-fat milk creates a richer texture, but semi-skimmed milk also works.
  • Dairy-free milk can be substituted if needed.
  • Serve with maple syrup, fresh berries, yogurt, honey, or nut butter.
  • For extra fluffy pancakes, avoid pressing them with a spatula while cooking.
