For the Beignets:
- 2 1/4 teaspoons 1 packet active dry yeast
- 3 tablespoons warm water
- 3/4 cup buttermilk
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter melted
- 1 large egg
- 1/2 teaspoon salt
- 3 cups all-purpose flour plus more for dusting
- Vegetable oil for frying
For the Glaze:
- 2 cups powdered sugar
- 1/4 cup buttermilk
- 1/2 teaspoon vanilla extract
Step 1 – Activate the Yeast
Step 2 – Prepare the Dough
In a large mixing bowl, whisk together buttermilk, sugar, melted butter, egg, and salt. Add the yeast mixture and stir well. Gradually add flour, mixing until a soft dough forms. The dough will be slightly sticky, which is normal.
Step 3 – Let It Rise, Roll & Cut
Cover the bowl with plastic wrap or a clean towel. Let the dough rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Lightly flour your work surface and roll the dough to about 1/4 inch thickness. Cut into 2-inch squares using a sharp knife or pizza cutter.
Step 4 – Fry the Beignets
Pour vegetable oil into a heavy-bottomed pot to about 2 inches deep. Heat oil to 350°F (175°C).
Carefully fry 3–4 beignets at a time for about 1 minute per side, until golden brown and puffed.
Remove and drain on paper towels.
Step 5 – Make the Glaze
In a bowl, whisk powdered sugar, buttermilk, and vanilla extract until smooth. Dip slightly warm beignets into the glaze or drizzle over the top. Allow glaze to set for a few minutes before serving.
