Easy Fresh Corn Salsa

- 2 cups cooked sweet yellow corn kernels
- 2 small vine ripe tomatoes seeded and diced
- 1/2 cup red onion diced
- 1 scallion diced
- 1 jalapeño diced (seeds removed for mild)
- 2 tbsp chopped cilantro
- Juice of 1 fresh lime
- Kosher salt to taste
- Fresh black pepper to taste
In a large mixing bowl, combine the corn, diced tomatoes, red onion, scallion, and jalapeño.
Add the chopped cilantro and freshly squeezed lime juice.
Season with kosher salt and black pepper to taste.
Mix everything gently until well combined.
Cover and refrigerate the Corn Salsa Recipe for at least 1 hour to allow the flavors to blend.
Serve chilled as a dip, topping, or side dish.
