Easy Egg Salad Sandwich Recipe

A creamy Egg Salad Sandwich Recipe made with hard-boiled eggs, mayo, and Dijon mustard.

Ingredients
  

  • 6 hard-boiled eggs
  • ¼ cup mayonnaise
  • 1 –2 teaspoons pickle juice lemon juice, or white vinegar
  • 1 –2 teaspoons Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 4 slices bread toasted
  • 4 lettuce leaves
  • Chives optional

Instructions
 

  • Peel the hard-boiled eggs and chop them into small pieces.
  • Place the chopped eggs in a medium mixing bowl.
  • Add mayonnaise, pickle juice, and Dijon mustard.
  • Stir gently until everything is well combined.
  • Season with salt and black pepper to taste.
  • Cover and refrigerate until ready to serve.
  • To assemble the Egg Salad Sandwich Recipe, place lettuce leaves on toasted bread.
  • Spoon the egg salad mixture over the lettuce.
  • Top with chives and additional black pepper if desired.
  • Serve immediately and enjoy.

Notes

  • Serve with potato chips, fresh fruit, or a green salad.
  • Lettuce can be replaced with spinach or arugula.
  • Whole wheat, sourdough, rye, or multigrain bread all work well.
  • The egg salad can also be served in wraps, croissants, or lettuce cups.
