Ingredients

For the Seared Chicken

  • 1 lb skinless boneless chicken breasts (2 large breasts, sliced horizontally)
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • 1 tablespoon all-purpose flour
  • 2 tablespoons olive oil

For the Creamy Spinach Sauce

  • 1½ cups heavy cream
  • 5 cloves garlic minced
  • ½ cup freshly grated Parmesan cheese
  • 4 cups fresh spinach

Garnish

  • 3 tablespoons fresh thyme

Instructions

  • Slice each chicken breast horizontally to create four thin cutlets.
  • Season both sides with salt and black pepper.
  • Lightly coat each piece with flour.
  • Heat a large skillet over medium heat for 2 minutes.
  • Add olive oil and place the chicken in the hot skillet.
  • Cook for 5 minutes without moving the chicken to develop a golden crust.
  • Flip the chicken, reduce heat to medium-low, and cook another 5 minutes or until the internal temperature reaches 165°F (74°C).
  • Transfer the chicken to a plate.
  • In the same skillet, pour in the heavy cream and add minced garlic. Bring to a gentle boil while scraping up the flavorful browned bits from the pan.
  • Stir in the Parmesan cheese until completely melted and smooth.
  • Add the spinach and cook just until wilted.
  • Taste and season with additional salt and pepper if needed.
  • Return the chicken to the skillet and spoon the creamy spinach sauce over each piece, leaving some of the golden crust visible.
  • Garnish with fresh thyme and serve immediately. This Creamy Spinach Chicken pairs beautifully with mashed potatoes, pasta, rice, or crusty bread.

Notes

  • Serve over fettuccine, mashed potatoes, steamed rice, cauliflower rice, or buttered noodles.
  • Fresh thyme may be replaced with parsley or basil.
  • Add crushed red pepper flakes for a little heat.
  • Baby spinach works especially well because it wilts quickly.
