Easy Creamy Shrimp Linguine

Ingredients
  

  • 1 lb linguine pasta
  • 1 lb large shrimp peeled and deveined
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley chopped
  • 1 lemon juiced and zested
  • Salt to taste
  • Black pepper to taste
  • 1/4 tsp red pepper flakes optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  • While the pasta cooks, heat olive oil and butter in a large skillet over medium heat.
  • Season the shrimp with salt and black pepper. Add shrimp to the skillet and cook for 2 to 3 minutes per side until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and smooth.
  • Add lemon juice and lemon zest to the sauce. Return the shrimp to the skillet and toss to coat.
  • Add the drained linguine to the skillet and gently toss everything together. Add reserved pasta water a little at a time if needed to loosen the creamy shrimp linguine sauce.
  • Stir in fresh parsley and serve immediately while warm.

Notes

  • Linguine works best, but fettuccine or spaghetti can also be used.
  • For extra spice, increase the red pepper flakes.
  • Serve with garlic bread or a crisp green salad.
  • Fresh parsley can be replaced with basil for a different flavor profile.
