Cut apples into evenly sized pieces, about 1/2–1 inch cubes.
Add apple pieces and water to a skillet. Cover and cook over medium heat for about 5 minutes, stirring occasionally, until apples begin to soften and water is absorbed.
Add butter or coconut oil and stir until apples are fully coated. Cook for another 5 minutes, stirring frequently, until apples are soft and tender. Cover during the last 2 minutes if needed.
Stir in maple syrup, cinnamon, salt, and vanilla extract until well combined.
Cook for an additional 3–5 minutes, stirring every minute, until apples reach desired softness.
Remove from heat and serve warm.
