Ingredients

  • 3 apples chopped (about 3 cups)
  • 2 tablespoons water
  • 1 tablespoon salted butter or coconut oil
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt
  • 1/4 teaspoon pure vanilla extract

Instructions

  • Cut apples into evenly sized pieces, about 1/2–1 inch cubes.
  • Add apple pieces and water to a skillet. Cover and cook over medium heat for about 5 minutes, stirring occasionally, until apples begin to soften and water is absorbed.
  • Add butter or coconut oil and stir until apples are fully coated. Cook for another 5 minutes, stirring frequently, until apples are soft and tender. Cover during the last 2 minutes if needed.
  • Stir in maple syrup, cinnamon, salt, and vanilla extract until well combined.
  • Cook for an additional 3–5 minutes, stirring every minute, until apples reach desired softness.
  • Remove from heat and serve warm.

Notes

These cinnamon apples are delicious served over oatmeal, pancakes, waffles, yogurt, or ice cream. They also work well as a filling for crepes or turnovers.
