Ingredients
  

For the Stir Fry:

  • 1 lb boneless skinless chicken breast, cubed
  • Salt and pepper to taste
  • 2 tablespoons olive oil divided
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper chopped
  • 1/2 red bell pepper chopped
  • 1/2 cup baby carrots sliced
  • 2 teaspoons ginger minced
  • 2 garlic cloves minced

For the Sauce:

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/4 cup low sodium chicken broth
  • 3 tablespoons low sodium soy sauce
  • 1/4 cup honey
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon crushed red pepper flakes

Instructions
 

  • In a bowl, whisk together cornstarch and water, then add chicken broth, soy sauce, honey, sesame oil, and red pepper flakes. Set aside.
  • Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat.
  • Add chicken, season with salt and pepper, and cook for 3–5 minutes until fully cooked. Remove and set aside.
  • Reduce heat to medium and add remaining oil.
  • Add broccoli, bell peppers, and carrots. Cook until crisp-tender.
  • Stir in ginger and garlic and cook for 1 minute until fragrant.
  • Return chicken to the skillet and mix well.
  • Stir the sauce and pour over the chicken and vegetables.
  • Bring to a boil and cook for 1 minute until thickened.
  • Serve your Easy Chicken Stir Fry Recipe hot with rice or noodles.

Notes

  • Serve with steamed rice, brown rice, or noodles.
