easy Chicken Salad Croissant Recipe

A creamy Chicken Salad Croissant Recipe made with chicken, grapes, celery, and fresh dill.

Ingredients
  

  • ¼ cup mayonnaise
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons green onions finely chopped
  • 1 tablespoon light brown sugar
  • 2 teaspoons fresh dill minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • teaspoon ground black pepper
  • 3 cups cooked chicken chopped
  • 1 cup celery chopped
  • 1 cup red grapes quartered
  • ¼ cup cashews chopped or slivered almonds
  • 8 croissant rolls sliced in half

Optional:

  • Lettuce leaves
  • Sliced tomatoes

Instructions
 

  • In a large mixing bowl, combine mayonnaise, Greek yogurt, and lemon juice.
  • Add green onions, brown sugar, fresh dill, kosher salt, garlic powder, and black pepper. Stir until smooth and well combined.
  • Fold in the chopped chicken, celery, grapes, and cashews.
  • Mix thoroughly until everything is evenly coated with the dressing.
  • Cover and refrigerate for at least 15 minutes to allow the flavors to blend.
  • Taste and adjust seasoning with additional dill, salt, or pepper if desired.
  • To serve this Chicken Salad Croissant Recipe, spoon the chicken salad onto the bottom half of each croissant.
  • Add lettuce and tomato slices if desired.
  • Place the top half of the croissant over the filling and serve immediately.

Notes

  • Serve alongside fresh fruit, chips, or a green salad.
  • The chicken salad can be prepared one day ahead.
  • Keep croissants separate until serving to prevent sogginess.
  • Fresh dill provides the best flavor, but dried dill can be used if necessary.
