- 2 tablespoons sesame oil
- 2 tablespoons canola or vegetable oil
- 1 pound boneless skinless chicken breasts diced
- 1 ½ cups frozen peas and diced carrots
- 3 green onions sliced
- 2 to 3 garlic cloves minced
- 3 large eggs beaten
- 4 cups cooked rice
- 3 to 4 tablespoons soy sauce
- Salt and pepper to taste
Heat sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
Add diced chicken and cook for 3–5 minutes until fully cooked and lightly golden. Remove and set aside.
Add peas, carrots, and green onions. Cook for 2 minutes until slightly softened.
Stir in garlic and cook for 1 minute until fragrant.
Push vegetables to one side and scramble eggs on the other side of the pan.
Return chicken to the pan and add cooked rice.
Drizzle soy sauce evenly and toss everything together. Cook for 2–3 minutes until heated through.
