Easy Chicken Fried Rice Recipe

Easy chicken fried rice recipe made with tender chicken, rice, and vegetables.

Ingredients
  

  • 2 tablespoons sesame oil
  • 2 tablespoons canola or vegetable oil
  • 1 pound boneless skinless chicken breasts diced
  • 1 ½ cups frozen peas and diced carrots
  • 3 green onions sliced
  • 2 to 3 garlic cloves minced
  • 3 large eggs beaten
  • 4 cups cooked rice
  • 3 to 4 tablespoons soy sauce
  • Salt and pepper to taste

Instructions
 

  • Heat sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
  • Add diced chicken and cook for 3–5 minutes until fully cooked and lightly golden. Remove and set aside.
  • Add peas, carrots, and green onions. Cook for 2 minutes until slightly softened.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Push vegetables to one side and scramble eggs on the other side of the pan.
  • Return chicken to the pan and add cooked rice.
  • Drizzle soy sauce evenly and toss everything together. Cook for 2–3 minutes until heated through.

Notes

  • Substitute brown rice for a healthier option.
