Heat sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
Add diced chicken and cook for 3–5 minutes until fully cooked and lightly browned. Remove and set aside.
In the same pan, add peas, carrots, and green onions. Cook for 2 minutes until slightly softened.
Add garlic and cook for 1 minute until fragrant.
Push vegetables to one side and pour eggs on the other side. Scramble until fully cooked.
Return chicken to the skillet and add cooked rice.
Drizzle soy sauce evenly and stir well to combine.
Cook for another 2 minutes, stirring to coat the rice evenly.
Taste and adjust seasoning with salt and pepper if needed.
