Easy Chicken Fried Rice

Easy Chicken Fried Rice is a quick one-pan meal with chicken, rice, and vegetables.

Ingredients
  

  • 2 tablespoons sesame oil
  • 2 tablespoons canola or vegetable oil
  • 1 pound boneless skinless chicken breasts diced
  • 1 1/2 cups frozen peas and diced carrots
  • 3 green onions sliced
  • 2 –3 garlic cloves minced
  • 3 large eggs lightly beaten
  • 4 cups cooked rice
  • 3 –4 tablespoons low-sodium soy sauce
  • Salt and pepper optional

Instructions
 

  • Heat sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
  • Add diced chicken and cook for 3–5 minutes until fully cooked and lightly browned. Remove and set aside.
  • In the same pan, add peas, carrots, and green onions. Cook for 2 minutes until slightly softened.
  • Add garlic and cook for 1 minute until fragrant.
  • Push vegetables to one side and pour eggs on the other side. Scramble until fully cooked.
  • Return chicken to the skillet and add cooked rice.
  • Drizzle soy sauce evenly and stir well to combine.
  • Cook for another 2 minutes, stirring to coat the rice evenly.
  • Taste and adjust seasoning with salt and pepper if needed.
  • This Easy Chicken Fried Rice is now ready to serve hot and fresh

  • Add shrimp or beef sausage for variation
