Easy Chicken and Broccoli Noodle Stir Fry

Quick chicken and broccoli noodle stir fry

Ingredients
  

Main

  • 440 g udon noodles or noodles of choice
  • 300 g skinless chicken thigh fillets chopped into small pieces
  • 1 broccoli about 280 g, cut into even florets
  • 1/2 small red bell pepper julienned
  • 1 tsp toasted sesame seeds
  • Cooking oil rice bran oil or vegetable oil

Sauce (mix in a bowl)

  • 2 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp honey
  • 1 tsp minced garlic
  • 2 tsp sesame oil

Instructions
 

  • Marinate the chopped chicken in the sauce and set aside while preparing the other ingredients.
  • Heat a skillet or pan over medium-high heat. Add a thin layer of oil.
  • Add the chicken with the marinade and cook for about 5 minutes, stirring occasionally, until roughly 60% cooked.
  • Meanwhile, boil the udon noodles according to package instructions. Drain and set aside.
  • Add the broccoli florets and red bell pepper to the skillet. Stir-fry until the chicken is nearly fully cooked.
  • Add the cooked noodles and toss everything together until the chicken is fully cooked and coated in sauce.
  • Garnish with toasted sesame seeds and serve immediately.

Notes

You can add mushrooms, snap peas, or carrots for extra texture. Serve with a side of cucumber salad or enjoy on its own as a complete meal.
