Spread approximately 1/3 cup of filling near one edge of each tortilla.
Roll tightly into a taquito shape, leaving the ends open.
Melt the butter in a shallow bowl.
In a separate shallow bowl, combine the sugar and cinnamon.
Dip each rolled tortilla into the melted butter, coating all sides.
Roll each butter-coated tortilla in the cinnamon-sugar mixture.
Arrange the coated taquitos on the prepared baking sheet.
Bake the Cheesecake Taquitos for 15–20 minutes or until golden brown and crispy.
Allow them to cool for 5 minutes before serving.
Serve with fresh strawberries, chocolate sauce, caramel sauce, or whipped cream.
