EASY Cheesecake Taquitos

Cheesecake Taquitos are crispy baked tortillas filled with sweet cream cheese filling.

Ingredients
  

Cheesecake Filling

  • 2 blocks 8 ounces each cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 7 –8 small 8-inch flour tortillas

Cinnamon Sugar Topping

  • 1/2 cup salted butter melted
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon

Optional Serving Toppings

  • Fresh strawberries sliced
  • Chocolate sauce
  • Caramel sauce
  • Fresh whipped cream

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease a large baking sheet.
  • In a large mixing bowl, beat the softened cream cheese, sour cream, sugar, and vanilla extract until smooth and creamy.
  • Microwave the tortillas for about 10 seconds to make them easier to roll.
  • Spread approximately 1/3 cup of filling near one edge of each tortilla.
  • Roll tightly into a taquito shape, leaving the ends open.
  • Melt the butter in a shallow bowl.
  • In a separate shallow bowl, combine the sugar and cinnamon.
  • Dip each rolled tortilla into the melted butter, coating all sides.
  • Roll each butter-coated tortilla in the cinnamon-sugar mixture.
  • Arrange the coated taquitos on the prepared baking sheet.
  • Bake the Cheesecake Taquitos for 15–20 minutes or until golden brown and crispy.
  • Allow them to cool for 5 minutes before serving.
  • Serve with fresh strawberries, chocolate sauce, caramel sauce, or whipped cream.

Notes

  • Substitute Greek yogurt for sour cream if desired.
  • Add strawberry preserves inside the filling for a fruity twist.
  • Serve warm for the creamiest texture.
