Ingredients
  

  • 2 6-ounce salmon fillets
  • 1 cup fresh peaches diced
  • ¼ cup apple juice
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a medium bowl, combine the diced peaches, apple juice, apple cider vinegar, honey, soy sauce, olive oil, Dijon mustard, garlic powder, salt, and black pepper.
  • Mix until well combined to create a flavorful peach glaze.
  • Arrange the salmon fillets on the prepared baking sheet.
  • Spoon the peach mixture evenly over each fillet.
  • Roast the Bourbon Peach Roasted Salmon for 15–20 minutes, or until the salmon flakes easily with a fork and reaches your preferred doneness.
  • Let the salmon rest for 2–3 minutes.
  • Garnish with chopped fresh parsley and serve immediately.

Notes

  • Nectarines can replace peaches.
  • Maple syrup can be substituted for honey.
  • Fresh thyme or rosemary pairs beautifully with the peach glaze.
