easy Balsamic Strawberry and Feta Salad

A refreshing Balsamic Strawberry and Feta Salad made with baby spinach, strawberries, cucumbers, avocado, and feta cheese.

Ingredients
  

  • 2 Persian cucumbers chopped
  • 10 strawberries sliced
  • 8 ounces baby spinach pre-washed
  • ¼ red onion thinly sliced
  • ¼ head red cabbage shredded (about 1½ cups)
  • 6 fresh mint leaves julienned
  • 2 tablespoons balsamic vinegar
  • Juice of ½ lemon
  • Pinch of salt
  • Freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • ½ cup feta cheese or vegan feta
  • 1 avocado chopped (for topping)

Instructions
 

  • Wash and prepare all produce as needed.
  • Chop the Persian cucumbers into bite-sized pieces.
  • Slice the strawberries and red onion thinly.
  • Shred the red cabbage and julienne the fresh mint leaves.
  • Add the baby spinach, cucumbers, strawberries, red onion, cabbage, and mint to a large serving bowl.
  • Drizzle the balsamic vinegar, fresh lemon juice, and olive oil evenly over the salad.
  • Season with salt and freshly ground black pepper.
  • Gently toss until all ingredients are coated in the dressing.
  • Top the Balsamic Strawberry and Feta Salad with chopped avocado and crumbled feta cheese.
  • Garnish with additional black pepper if desired.
  • Serve immediately and enjoy.

  • This salad is best enjoyed fresh.
  • Add sliced avocado right before serving to prevent browning.
