Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1 zucchini diced
  • 1 bell pepper diced
  • 1 red onion chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh basil chopped, for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with oregano, salt, and black pepper.
  • Cook the chicken for 5–7 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
  • In the same skillet, sauté the garlic, cherry tomatoes, zucchini, bell pepper, and red onion for 4–5 minutes until slightly tender.
  • Stir in the orzo and pour in the chicken broth. Bring to a gentle boil.
  • Reduce the heat, cover, and simmer for about 10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed.
  • Return the chicken to the skillet. Drizzle the balsamic vinegar over everything and simmer for another 2–3 minutes so the flavors blend together.
  • Garnish with fresh basil and serve your Easy Balsamic Chicken Orzo warm.

Notes

  • For extra vegetables, add mushrooms, spinach, or asparagus.
  • Fresh basil provides the brightest flavor, but dried basil can be used in a pinch.
  • Serve with a crisp green salad or warm garlic bread.
  • A sprinkle of grated Parmesan complements the balsamic flavors beautifully.
