Easy Baked Chicken Meatballs

Ingredients
  

Meatballs

  • 2 pounds ground chicken
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon Worcestershire sauce
  • 3/4 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 –3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley finely chopped

Lemon Garlic Herb Butter Sauce

  • 1/4 cup unsalted butter
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh oregano
  • Pinch of salt
  • Optional: crushed red pepper flakes

Instructions
 

  • Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix all meatball ingredients until well combined.
  • Scoop about 2 tablespoons of mixture and roll into balls. Place on the baking sheet.
  • Bake for 20 minutes or until internal temperature reaches 165°F (74°C).
  • While baking, prepare the sauce by melting butter and lemon juice over medium heat.
  • Add garlic and cook briefly until fragrant. Remove from heat and stir in herbs.
  • Brush the lemon garlic butter over the easy baked chicken meatballs once cooked.
  • Serve warm with extra sauce and optional red pepper flakes.
