Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
In a large bowl, mix all meatball ingredients until well combined.
Scoop about 2 tablespoons of mixture and roll into balls. Place on the baking sheet.
Bake for 20 minutes or until internal temperature reaches 165°F (74°C).
While baking, prepare the sauce by melting butter and lemon juice over medium heat.
Add garlic and cook briefly until fragrant. Remove from heat and stir in herbs.
Brush the lemon garlic butter over the easy baked chicken meatballs once cooked.
Serve warm with extra sauce and optional red pepper flakes.
