EASY Avocado and Cottage Cheese Toast

Ingredients
  

  • 2 hard-boiled eggs
  • ¼ cup cottage cheese
  • ½ ripe avocado
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon hot sauce
  • ¼ teaspoon chipotle sauce
  • 2 slices sourdough bread
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Dice the hard-boiled eggs into small ½-inch cubes.
  • Add the eggs, cottage cheese, avocado, garlic powder, onion powder, salt, pepper, hot sauce, and chipotle sauce to a bowl.
  • Mash and stir until everything is well combined. The texture should resemble a chunky egg salad.
  • Toast the sourdough bread until golden and crisp. Butter the toast if desired.
  • Evenly spread the Avocado and Cottage Cheese Toast mixture over both slices.
  • Finish with an extra drizzle of hot sauce and serve immediately.
