Easy Air Fryer Zucchini Fries

Ingredients
  

  • 3 small zucchini or 2 large
  • 1 cup panko crumbs
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup flour
  • 2 eggs
  • 1 tablespoon water

Instructions
 

  • Slice the zucchini into evenly sized sticks.
  • Place the zucchini in a bag with the flour and shake well to coat.
  • In a medium bowl, mix the panko crumbs, parmesan cheese, Italian seasoning, garlic powder, and salt.
  • In a separate bowl, whisk together the eggs and water.
  • Dip each floured zucchini stick into the egg mixture, then coat it in the panko mixture.
  • Lightly spray the air fryer basket with olive oil. Arrange the coated zucchini in a single layer.
  • Spray the tops lightly with olive oil.
  • Cook Air Fryer Zucchini Fries at 350°F (175°C) for 7–12 minutes, or until golden and crispy.
  • Serve warm with marinara or ranch dip.

Notes

  • Serve with marinara sauce, garlic yogurt dip, or ranch dressing.
  • You can substitute panko with crushed cornflakes for a different texture.
