Slice the zucchini into evenly sized sticks.
Place the zucchini in a bag with the flour and shake well to coat.
In a medium bowl, mix the panko crumbs, parmesan cheese, Italian seasoning, garlic powder, and salt.
In a separate bowl, whisk together the eggs and water.
Dip each floured zucchini stick into the egg mixture, then coat it in the panko mixture.
Lightly spray the air fryer basket with olive oil. Arrange the coated zucchini in a single layer.
Spray the tops lightly with olive oil.
Cook Air Fryer Zucchini Fries at 350°F (175°C) for 7–12 minutes, or until golden and crispy.
Serve warm with marinara or ranch dip.
