Ingredients
  

For the Chicken Marinade

  • 1.5 pounds chicken thighs or chicken breast
  • ¼ cup olive oil
  • 3 cloves garlic minced
  • ¼ cup lemon juice
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

For the Bowl

  • 4 cups cooked rice or cauliflower rice
  • 1 cup cherry tomatoes halved or diced
  • 1 medium cucumber diced
  • 1 medium red onion thinly sliced or pickled
  • ½ cup Kalamata olives
  • 1 cup feta cheese or goat cheese
  • ¼ cup fresh parsley chopped

Instructions
 

  • In a bowl, whisk together olive oil, garlic, lemon juice, vinegar, oregano, cumin, salt, and pepper.
  • Cut chicken into bite-sized pieces and toss well in the marinade. Cover and marinate for at least 30 minutes.
  • Heat a skillet over medium-high heat and cook the chicken for 5–7 minutes per side until golden and cooked through.
  • Prepare the rice or cauliflower rice according to package directions and divide into serving bowls.

  • Garnish with fresh parsley and serve immediately.

Notes

These bowls are highly adaptable. Add hummus, tzatziki sauce, or roasted vegetables for extra variety. Serve with warm flatbread or pita if desired.
