Preheat your oven to 325°F (163°C).
If the peanut butter is thick, gently warm it until smooth and easy to stir.
In a medium mixing bowl, combine the chocolate protein powder, cocoa powder, sugar or xylitol, salt, and baking soda.
Add the peanut butter and water to the dry ingredients.
Stir vigorously until a thick cookie dough forms and all peanut butter clumps are fully incorporated.
Fold in chocolate chips if using.
Roll the dough into balls or shape into cookies.
Place on a lined baking sheet and flatten slightly with the back of a spoon if desired.
Bake for 8 minutes for softer cookies or 11 minutes for a chewier texture.
Remove from the oven and allow the Chocolate Protein Cookies to cool completely before serving.
