Add the oat flour, walnuts, almond butter, Medjool dates, vanilla extract, water, and sea salt to a food processor.
Pulse until the mixture becomes sticky and holds together when pinched.
If the mixture appears too dry, add additional water one teaspoon at a time and pulse again.
Transfer the mixture to a large mixing bowl.
Stir in the mini chocolate chips until evenly distributed.
Use a 2-tablespoon cookie scoop to portion the mixture.
Roll each portion between your hands to form smooth balls.
Place the Date Balls on a lined tray or plate.
Chill for 15–20 minutes if desired.
Enjoy immediately or store for later.
