Cucumber Caprese Salad is a fresh Italian-inspired salad made with tomatoes, mozzarella, cucumbers, basil, olive oil, and balsamic vinegar.

Ingredients
  

  • 1 pound beefsteak or heirloom tomatoes sliced 1/4-inch thick
  • 8 ounces fresh mozzarella cheese sliced into rounds
  • 3 Persian cucumbers or 1 large English cucumber thinly sliced crosswise
  • Extra-virgin olive oil
  • Balsamic vinegar
  • Flaky sea salt
  • Freshly ground black pepper
  • 6 to 8 large fresh basil leaves

Instructions
 

  • Arrange the tomato slices in a slightly overlapping pattern on a serving platter.
  • Layer the mozzarella slices and cucumber slices evenly over the tomatoes.
  • Drizzle extra-virgin olive oil over the salad.
  • Add a light drizzle of balsamic vinegar for a tangy finish.
  • Sprinkle flaky sea salt and freshly ground black pepper evenly across the top.
  • Tear the basil leaves into smaller pieces and scatter them over the salad.
  • Serve the Cucumber Caprese Salad immediately for the freshest flavor.

Notes

You can substitute cherry tomatoes or grape tomatoes for a slightly sweeter salad.
