Crunchy Chicken Caesar Sandwich

- 4 sub rolls
- 1 lb chicken tenderloins tenderized
- 2 hearts romaine lettuce chopped
- Fresh grated parmesan
- Lemon juiced
- Caesar dressing for salad + 1/2 cup for breading
- Breadcrumbs or panko crumbs
- Flour
- Avocado oil for frying
- 2 heads garlic roasted
- 1 tbsp parsley finely chopped
- 8 tbsp unsalted butter softened
- 1/8 cup fresh parmesan grated
- Salt and pepper
Roast Garlic
Preheat oven to 425°F (220°C).
Slice garlic heads, drizzle with olive oil, salt, and pepper.
Wrap in foil and roast for 30–45 minutes until soft and golden.
Prepare Garlic Butter & Bread
Mix roasted garlic, butter, parsley, parmesan, salt, and pepper.
Slice and slightly hollow sub rolls.
Spread garlic butter inside and sprinkle extra parmesan.
Bake at 350°F (175°C) for 10–15 minutes until golden.
Prepare Chicken
Set up breading station: flour, Caesar dressing (mixed with water), breadcrumbs.
Coat chicken in flour, dip in dressing, then coat in breadcrumbs.
Heat avocado oil in a pan and fry until golden and cooked through.
Assemble Sandwich
Layer crispy chicken, Caesar salad, and extra parmesan inside toasted rolls.
