Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper.
Drain and rinse the chickpeas thoroughly.
Spread the chickpeas on a clean kitchen towel.
Pat them completely dry.
Remove any loose skins for maximum crispiness.
Transfer the chickpeas to the prepared baking sheet.
Drizzle lightly with olive oil.
Sprinkle generously with sea salt.
Toss until evenly coated.
Spread the chickpeas into a single layer.
Roast for 20–30 minutes, stirring halfway through cooking.
Continue roasting until golden brown and crispy.
Remove from the oven.
While still warm, sprinkle with paprika, curry powder, or your favorite seasoning.
Toss to coat evenly.
Allow to cool slightly before serving.
