Crispy Roasted Chickpeas

Crispy Roasted Chickpeas are a healthy, crunchy snack made with chickpeas, olive oil, and simple seasonings.

Ingredients
  

  • cups cooked chickpeas drained and rinsed
  • Extra-virgin olive oil for drizzling
  • Sea salt to taste
  • Paprika curry powder, or preferred spices (optional)

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper.
  • Drain and rinse the chickpeas thoroughly.
  • Spread the chickpeas on a clean kitchen towel.
  • Pat them completely dry.
  • Remove any loose skins for maximum crispiness.
  • Transfer the chickpeas to the prepared baking sheet.
  • Drizzle lightly with olive oil.
  • Sprinkle generously with sea salt.
  • Toss until evenly coated.
  • Spread the chickpeas into a single layer.
  • Roast for 20–30 minutes, stirring halfway through cooking.
  • Continue roasting until golden brown and crispy.
  • Remove from the oven.
  • While still warm, sprinkle with paprika, curry powder, or your favorite seasoning.
  • Toss to coat evenly.
  • Allow to cool slightly before serving.

Notes

  • Canned chickpeas work perfectly for convenience.
  • Add cayenne pepper for extra heat.
  • Use smoked paprika for a deeper flavor.
  • Excellent as a topping for soups, grain bowls, and salads.
