- 1 15-ounce can chickpeas (garbanzo beans)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon grated lemon zest
- Sea salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons grated Parmesan cheese made with microbial or vegetarian rennet
- Additional grated Parmesan cheese for garnish (optional)
Step 2: Prepare the chickpeas
Drain and rinse the canned chickpeas thoroughly under cold running water.
Spread them over a clean kitchen towel or several layers of paper towels. Gently pat them dry, removing any loose skins.
The drier the chickpeas are before roasting, the crispier they will become in the oven.
Step 3: Season the chickpeas
Transfer the dried chickpeas to a large mixing bowl.
Add the olive oil, garlic powder, grated lemon zest, sea salt, black pepper, and Parmesan cheese.
Toss gently until the chickpeas are evenly coated with the oil, seasonings, and cheese.
Step 4: Arrange on the baking sheet
Step 5: Roast until golden
Bake the Crispy Parmesan Roasted Chickpeas for approximately 45–50 minutes, stirring or shaking the baking sheet halfway through cooking.
Watch them closely during the final few minutes. They should become golden brown and crisp without burning.
Step 6: Cool and serve
Remove the baking sheet from the oven and allow the chickpeas to cool for several minutes.
Sprinkle with additional grated Parmesan cheese if desired.
Serve warm or at room temperature as a crunchy, savory snack.
For a dairy-free or vegan version, replace the Parmesan cheese with a suitable plant-based Parmesan alternative.
For a brighter flavor, add a little extra freshly grated lemon zest after roasting.
These garlic Parmesan chickpeas are delicious served alongside fresh vegetables, hummus, or a yogurt-based dip.
