Preheat oven to 400°F (200°C). Brush avocado oil or olive oil evenly over a baking sheet.
Rinse mushrooms and pat dry thoroughly.
Grind sunflower seeds in a blender or food processor until they reach a powder-like texture.
In a large zippered bag, combine ground sunflower seeds, almond flour, garlic powder, sea salt, paprika, dried parsley, and optional parmesan cheese. Shake to mix.
In a bowl, beat the egg. Stir in melted butter if using.
Dip each mushroom into the egg mixture, then place it into the bag with the coating mixture. Seal and shake until fully coated.
Arrange mushrooms on the prepared baking sheet.
Bake for 12–14 minutes, turning halfway through.
Broil on low for 1–2 minutes to crisp the coating further, watching carefully to prevent burning.
Cool slightly and serve warm.
