Combine honey, hot sauce, and chili flakes in a bowl. Warm briefly in the microwave (about 20 seconds), stir, and set aside to cool.
Slice chicken breasts horizontally to create four even pieces.
Mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
Set up three shallow bowls: flour mixed with half the seasoning, beaten eggs, and panko mixed with remaining seasoning.
Coat each chicken piece in flour, egg, then panko, pressing firmly.
Heat oil in a large pan over medium-high heat. Fry chicken for 3–4 minutes per side until golden and cooked through.
Transfer chicken to a rack. Top generously with crumbled feta and grill (broil) until feta is soft and lightly golden.
Drizzle with hot honey and serve immediately.
