Crispy Gnocchi With Spinach and Feta – Fresh & Flavorful

Crispy Gnocchi With Spinach and Feta features golden pan-fried gnocchi tossed with lemony spinach and fresh herbs.

Ingredients
  

  • 5 ounces baby spinach
  • 6 ounces Greek feta crumbled (about 1 cup)
  • 1 lemon halved
  • 5 tablespoons extra-virgin olive oil
  • Salt and black pepper
  • 1 16–17 ounce package potato gnocchi (shelf-stable, fresh, or frozen)
  • ¼ to ½ teaspoon crushed red pepper
  • 2 scallions thinly sliced
  • Large handful chopped fresh dill
  • Large handful chopped fresh mint

Instructions
 

  • Prepare the Spinach
  • Place spinach in a large bowl. Add half the feta, juice of ½ lemon, 1 tablespoon olive oil, and a pinch of salt. Massage vigorously to tenderize the leaves. Let sit while cooking the gnocchi.
  • Crisp the Gnocchi
  • Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil. Add gnocchi, separating any stuck pieces. Cook 8–10 minutes, tossing every 2 minutes, until golden and crispy. Let rest in pan 5 minutes to crisp further.
  • Combine and Finish
  • Add crispy gnocchi to spinach mixture. Add crushed red pepper, scallions, dill, and mint. Drizzle with remaining olive oil and toss gently. Top with remaining feta and squeeze remaining lemon juice over everything.
  • Serve
  • Serve immediately while gnocchi are crisp and warm.

Notes

  • Add grilled chicken for extra protein.
